Aloha! Welcome to our blog! We are Marissa and Melissa, a couple of Hawai'i transplants living in Spokane.   About Marissa Marissa lived in Hawai'i until university, when she moved to Oregon for school. She didn't miss home until the Fall when she realized even the rare sunny days were cold and that she couldn't play tennis whenever she wanted. However, a friend from high school had attended the same university and together, they would make local foods that reminded them of home.  After graduating, Marissa moved to Spokane, where she has been ever since. Here, she found a place to play tennis all year long, even if it is inside. Through this, she met Melissa! About Melissa Melissa was born and raised also in Hawai'i. She didn't leave the islands until she decided to pursue her master's degree at Eastern Washington University. She returned to Hawai'i, but the mountains were calling. Roasted Corn

            Fresh Roasted Corn Recipe Ingredients 4 ears of fresh corn, husked 2 tablespoon salted butter  1/2 tablespoon garlic powder 1/2 tablespoon chili powder 1/2 teaspoon parsley 2 tablespoons grated parmesan cheese Directions Preheat oven to 400 Ā° . Generously rub each ear of corn with butter. Spr inkle garlic powder, chili powder, and parsley evenly onto the corn. Place corn onto cookie sheet lined with foil. Bake in the oven for about 25 minutes. Rotate the corn and sprinkle Ā¼ tbsp. of parmesan on each ear of corn. Continue to bake for 10 more minutes until cheese is melted.  Enjoy hot and fresh!

Pumpkin Mochi

 Pumpkin Mochi Recipe Ingredients 1 sick of butter, melted 2 eggs 7 oz sweetened condensed milk (half a can) 15 oz pumpkin puree 1 teaspoon vanilla 1 1/2 cups mochiko (glutinous rice flour) 3/4 cup granulated sugar 1 teaspoon baking powder 1/4 teaspoon cinnamon 1/4 teaspoon ground ginger 1/8 teaspoon nutmeg Directions Grease a 9"x9" pan and preheat the oven to 350 degrees F.  Combine wet ingredients and mix well.  Combine dry ingredients and whisk together. Add the dry ingredients to the wet mix and stir until combined.  Pour the batter into the greased pan and bake for 50-60 minutes.  Cut after cooling. 

Cake Noodles

  Cake Noodles Recipe Noodle Ingredients 1 pound fresh saimin/ramen noodles 4 tablespoons oil Noodle Directions 1. Place the noodles in a large pot of boiling water for 2-3 minutes.  2. Drain the noodles in a colander.  3. Heat a large, nonstick frying pan on medium-high. Add 4 tablespoons of oil. 4. Add the drained noodles and spread evenly in a thin layer covering the bottom of the pan.  5. Cook the noodles until golden brown. Flip the noodle cake over to crisp the other side. You may need to add more oil to nicely crisp the second side.   6. Remove noodle cake to a cutting board and cut into desired size and shape.  Sauce Ingredients 3 cups chicken stock 3 tablespoons oyster sauce 2 tablespoons soy sauce 2 teaspoons sesame oil 2 teaspoons kosher salt 1 teaspoon sugar 1/2 teaspoon white pepper cornstarch slurry = 6 tablespoons cornstarch with 1 cup water Sauce Directions Make the cornstarch slurry by mixing the cornstarch and water together in a sepa...

Spam Musubi and Vegetarian Tofu Musubi

 Spam Musubi  Ingredients 1 can of spam 2 tablespoons shoyu (soy sauce) 2 tablespoons sugar 1 tablespoon mirin 3 cups of white rice, uncooked Nori (dried seaweed sheets) Furikake (optional) Directions Cook the rice. Once cooked, allow to slightly cool and set aside.  Cut spam into 9 slices.  Add shoyu, mirin, and sugar to a pan on medium heat and stir while heating up to dissolve sugar.   Place 1 layer of spam on the pan. Flip each piece of spam over to cook the other side once it is nicely browned and caramelized. Remove from heat and cook the remaining slices.  Cut the nori sheet in half along the longer side. Place one half, shiny side down, on a flat surface. Place the spam musubi mold on the nori.  Add a layer of rice, press down with the other piece of the mold. Thai Basil Eggplant Stirfry Ingredients 4 tablespoons cooking oil 2 cloves garlic, minced 2 medium Chinese or Japanese eggplant (or 1 large Italian eggplant), sliced 1 green bell pepper, sliced 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 white onion, sliced optional for protein: 14 oz firm tofu, pork, chicken 1/2 cup Thai basil leaves, roughly chopped Sauce:  2.5 tablespoons maple syrup 3 tablespoons shoyu (soy sauce) 2 tablespoons rice vinegar 1-2 tablespoons sriracha, 1 teaspoon toasted sesame oil 1 pinch coriander 1 pinch cinnamon powder 1/3 cup water Cornstarch slurry: 2 teaspoons cornstarch 2 tablespoons water Directions: 1. Prepare the sauce by blending all sauce ingredients together and set aside.  2. Prepare the cornstarch slurry and set aside. 3. Cut top and bottom ends off eggplant. 4. Slice into 3/4-inch pieces. 5.  Peanut Butter Pumpkin Dog Treat Recipe Ingredients 2.5 cups whole wheat flour 1 can pumpkin 2 eggs 3 tablespoons peanut butter 1/2 teaspoon salt 1 teaspoon cinnamon Directions 1. Preheat oven to 375 degrees Fareinheit 2. Mix all the ingredients in a bowl 3. Mold into desired shapes (I use silicone paw print and bone molds.  You could also roll the dough out like cookies.) 4. Bake for 40 minutes 5. Give to your furry friend!

Apple Crumble

Apple Crumble Recipe original recipe here Ingredients about 10 apples, peeled, cored, and cubed. Place in a large bowl (we used Swiss Gourmet apples, but any tart apple will do) 1 tablespoon + 1 cup flour (we used whole wheat but white works too) 3/4 cup sugar 2 tablespoons lemon juice 1 tablespoon + 1 teaspoon cinnamon 1 cup rolled oats 1 cup brown sugar 1/2 tsp baking powder 1/2 cup unsalted butter, melted 1 teaspoon salt Directions 1. Preheat oven to 350 degrees Fahrenheit. 2. Add 1 tablespoon flour, sugar, 1 tablespoon of cinnamon, and lemon juice to the bowl of apples.  Toss until equally coated and pour into a 13x9 in baking pan. 3. Mix 1 cup flour, 1 teaspoon cinnamon, rolled oats, brown sugar, baking powder, unsalted butter, and salt in a bowl. Aim for it to form clumps.  4. Spread the topping over the apples, distributing evenly. 5. Bake for 30-40 minutes. 6. Take out and let sit for about 10 minutes. 7. Enjoy! (We recommend topping with vanilla ice cream)
