Pumpkin Mochi

 Pumpkin Mochi Recipe

Ingredients

1 sick of butter, melted

2 eggs

7 oz sweetened condensed milk (half a can)

15 oz pumpkin puree

1 teaspoon vanilla

1 1/2 cups mochiko (glutinous rice flour)

3/4 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon cinnamon

1/4 teaspoon ground ginger

1/8 teaspoon nutmeg

Directions

Grease a 9"x9" pan and preheat the oven to 350 degrees F. 

Combine wet ingredients and mix well. 

Combine dry ingredients and whisk together.

Add the dry ingredients to the wet mix and stir until combined. 

Pour the batter into the greased pan and bake for 50-60 minutes. 

Cut after cooling.
