Roasted Corn

            Fresh Roasted Corn Recipe Ingredients 4 ears of fresh corn, husked 2 tablespoon salted butter  1/2 tablespoon garlic powder 1/2 tablespoon chili powder 1/2 teaspoon parsley 2 tablespoons grated parmesan cheese Directions Preheat oven to 400 ° . Generously rub each ear of corn with butter. Spr inkle garlic powder, chili powder, and parsley evenly onto the corn. Place corn onto cookie sheet lined with foil. Bake in the oven for about 25 minutes. Rotate the corn and sprinkle ¼ tbsp. of parmesan on each ear of corn. Continue to bake for 10 more minutes until cheese is melted.  Enjoy hot and fresh!

Pumpkin Mochi

 Pumpkin Mochi Recipe Ingredients 1 sick of butter, melted 2 eggs 7 oz sweetened condensed milk (half a can) 15 oz pumpkin puree 1 teaspoon vanilla 1 1/2 cups mochiko (glutinous rice flour) 3/4 cup granulated sugar 1 teaspoon baking powder 1/4 teaspoon cinnamon 1/4 teaspoon ground ginger 1/8 teaspoon nutmeg Directions Grease a 9"x9" pan and preheat the oven to 350 degrees F.  Combine wet ingredients and mix well.  Combine dry ingredients and whisk together. Add the dry ingredients to the wet mix and stir until combined.  Pour the batter into the greased pan and bake for 50-60 minutes.  Cut after cooling.
