Vegetable and Shrimp Tempura

 Vegetable and Shrimp Tempura Recipe

Ingredients

Vegetables 

        We used zucchini, green beans, mushrooms, and carrots.  Other good options are eggplant, 

        broccoli, kabocha, & Okinawan sweet potato

Shrimp (Peeled and deveined)

Panko

1 c. flour

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon garlic powder

4 eggs

1 quart vegetable oil

Directions

1. Preheat the oil to 350 degrees

2. Prepare the vegetables i.e. Slice the zucchini and carrots into rounds, trim the ends of the green beans, half the mushrooms

3. Mix the flour, paprika, salt, pepper, and garlic powder.

4. In a separate bowl eat the eggs.

5. Pour Panko into another bowl.

6. Once the oil is heated, coat the veggies and shrimp in flour, then the egg, and then the Panko.  Finally place the veggies and shrimp into the oil and cook until golden brown.

7. Drain off excess oil (we put the items onto a napkin after it's done cooking).

8. Enjoy with dipping sauce!
